Iconic champagne house and multi-award winning brasserie and cocktail lounge join forces to open luxury outdoor drinking experience for summer
With summer fast approaching, multi-award winning brasserie cocktail lounge and bar Dine launches its long-awaited Outdoor Terrace this month. Offering al fresco drinks in the sun and into the evening, Dine has joined forces with legendary champagne house Charles Heidsieck to create a luxurious drinking experience for the Edinburgh social scene.
Charles Heidsieck is one of the most admired Champagne houses thanks to the unrivalled and consistently high quality of its wines. The current range is of the most awarded collections of wines in the world winning countless awards and accolades from the benchmark Brut Reserve, to the top cuvee Blanc des Millenaires. In the UK the wines are not sold in multiple retail, so not in danger of any supermarket discounting. They are sold to independent wine merchants, luxury retail and top restaurants and hotels. Some of the customers include Michelin starred restaurants, as well as the likes of The Ritz, Oblix in the Shard and The Paris Opera Bastille.

THE BRUT RÉSERVE EXPRESSES the very quintessence of the Charles Heidsieck style. Easily recognizable, this wine is the fruit of a unique blend that can be summarized in one equation:
60 : the number of hand-selected crus for a blend that is precise, crisp and tailor-made. Wines produced in the harvest year, a third for each variety (Meunier, Chardonnay and Pinot Noir), are vinified cru by cru, variety by variety, in stainless steel vats.
40 : a high proportion of 40% reserve wines, equally divided between Chardonnay and Pinot Noir, ensure the fine complexity and voluptuousness of the Brut Réserve.
10 : the reserve wines average age, extraordinary for Champagne.
Sourced from the best crus produced in the greatest years, the wines placed in reserve are kept for between 5 and 15 years in stainless steel tanks if not more. This maturing time is essential for their refinement and for the development of their aromatic range.
Rosé Réserve, powerful and stylish.
COMPLEX: an elaborate blend of the three champagne grape varieties. PRECISE: a very fine selection of red wines. DEEP: matured for over 3 years in our two-thousand-year-old chalk cellars. GENEROUS: a pulpy and lively champagne with notes of wild strawberry. A powder pink rosé, with a delicate sparkle. A complex nose of homemade strawberry jam and fresh gingerbread. A deep wine with an aromatic finish.
BRUT MILLÉSIME 2005
A wine of distinct character, from an exceptional vintage.
After many years ageing in the unique and ancient Crayères acquired by its founder Charles Heidsieck, this champagne reveals itself as a wine poised between elegance and complexity, with a smooth texture and great length on the palate. By choosing this Vintage Brut 2005, you are entering into Charles’ inner circle.
ROSE MILLÉSIME 2006
An intense nose of freshly made strawberry jam and mingle with cinnamon, cardamom, honey and pink praline. On the palate it is layered and complex with notes of liquorice, blackberry tea, cherries, pink peppercorns and fresh figs. The finish is long and sophisticated.

The 40-seat patio area will also feature a number of armchairs for lingering drinks, imposing champagne trunks housing a variety of reserves and an exclusive limited edition Champagne Charlie Menu featuring a full list of Charles Heidsieck champagnes, a Champagne Charlie Signature cocktail and some complementary bar bites such designed to enhance flavours. Other cocktails, wines and beers will be available and there will be dedicated staff outdoors to look after guests
Dine’s executive chef and co-owner Stuart Muir commented on the launch: “The season for summer drinks is upon us and we wanted to offer an atmospheric and luxurious area for guests to enjoy, whether they are taking time out from the hustle and bustle of the city centre or relaxing before or after a show. We’re delighted to be partnering with Charles Heidsieck and showcasing their impressive range of brut reserves.”
Situated above the Traverse Theatre and next door to the Usher Hall, Dine is ideally located for those enjoying the summer festivities as well as locals in search of relaxed brasserie-style food, champagne or seasonal cocktails whilst soaking up the atmosphere or indulging in some people-watching. The Outdoor Terrace on Cambridge Street is a stone’s throw away from Princes Street and the West End.
